A torn ball of burrata with sliced ripe nectarines, black pepper honey, basil leaves and olive oil on a pale plate

Burrata, Nectarines and Black Pepper Honey

Method

  1. Warm the honey with the pepper in a small pan for 1 minute, until loose and fragrant. Take off the heat and stir in the lemon juice.

  2. Heat a griddle or frying pan until very hot and char the nectarine wedges for 1 minute on each side, just until marked. (For a raw version, skip this step.)

  3. Tear the burrata onto a plate, letting the creamy centre ooze.

  4. Arrange the nectarines around the cheese, spoon over the pepper honey and olive oil, then season with flaky salt and scatter with herbs.

  5. Serve immediately with bread.
